Rogue Creamery Smokey blue is cold smoked for 16 hours with hazelnut shells.
This smoking process lets new flavor and aromas seep inside the cheese. It blends harmoniously with the blue cheese, and flavors and aromas mix in a delicate balance, where nothing is overpowered. Smokey Blue has an extraordinary aroma of vanilla, dried fruit, and cured bacon. Its spicy sweet taste makes it stand out from other blue cheeses.
The smoking process is carried out at a relatively cold temperature below 86°F, which lets Smokey Blue keep its shape, without the creamy goodness melting away.
