Dorothy’s ensure the freshness of their cheese by buying their milk from a local cooperative adhering to the FARM program. This makes sure they can work with the freshest milk, that the dairy cows live in a good environment and ensures the ever-constant quality of their cheese.
Holy Smoke, a cow cheese infused with a smoky flavor
Dorothy’s Holy Smoke was co-developed with Rodolphe Lemeunier. An expert affineur acclaimed worldwide and winner of the “Best Craftmanship for Cheese” award. It’s no surprise that this collaboration gave birth to a splendid cheese. Holy Smoke has an extra-creamy texture and a bloomy orange rind. It is infused with a natural smoky flavor.
Inspiration for Holy Smoke
Dorothy’s are striving to share their best experiences in the form of cheeses. It was remembering cold winter nights, cozy in front of a blazing hearth, that Dorothy decided to find a way to share the fireplace’s warmth and feel in the way she knows best: by turning it into one more delicious cheese.
Ingredients: Cultured pasteurized milk and cream, salt, natural smoke flavor, annatto (for color), enzymes, microbial rennet (suitable for vegetarians).
Once you receive and open your package place the cheese(s) in the refrigerator as soon as possible.
